Haute-meal

Hi all- 2 posts in 2 days! L was making a fancy breakfast today, so I decided to blog it. I have never said the sentence “Can I stage your breakfast for a quick shoot?” before, but there’s a first time for everything.

Fancy Herb-y Scrambled Eggs

2 eggs, parsley, cipotle chili powder, and a sploosh of milk. Whisk it up!

Brunch Brulée

I know it looks like a burny, crispety-crunchety accident, but this Berry Chocolate Oatmeal Brulée is SO TASTY.

100_1175We love this recipe, especially because it’s so simple and tastes AMAZING.

YOU WILL NEED:

  • 4 fairly big ramekins (Single-serving baking dishes, about 1 cup each), OR a 1-quart baking dish. Note that whatever you use should be broiler-friendly.
  • 2 cups of instant oats
  • a li’l butter (to grease the dish[es]- you can also use the sprayable oil stuff)
  • 1 cup of frozen berries (we used a mix of raspberries, strawberries, blackberries, and blueberries)
  • 1/2 cup of chocolate chips
  • 1/4 cup brown sugar
  • 1/2 teaspoon of cinnamon

WHAT TO DO

  1. Grease the dish(es) with butter.
  2. Cook the oatmeal on the stove, according to the directions.
  3. Dump in the berries and chocolate chips.
  4. Stir it around on low heat, until the berries soften and the chocolate chips have melted.
  5. Plop all that goodness in the baking dish(es), and top it with the brown sugar and cinnamon.
  6. Place in the broiler for about 4 minutes, just until the topping gets dark and crackly.

Wave-o’s Ranch Arrows

Ever had an extreme craving for Mexican food?

ALL THE TIME?

Yeah, us too.

This Huevos Rancheros recipe is our adaptation of the one found at COOKIE+kate.

Because J has never successfully followed a recipe all the way through, and claims that he’s not about to start now.

Before you begin cooking, make sure you know how to fry eggs.

If not, marry someone who does.

That usually works for him.

 

Huevos Rancheros

YOU WILL NEED:

  • 2 cans of black beans, drained and rinsed
  • half an onion, chopped
  • chili powder, cumin
  • half a lime
  • 1/2 cup of salsa verde
  • 1 ripe avocado
  • handful of cilantro (fresh or dry)
  • 1 clove of garlic (or a teeny spoonful of the jarred stuff)
  • corn tortillas (1 per serving)
  • eggs (1 per serving)
  • Feta cheese
  • hot sauce (we used Sriracha)

WHAT TO DO:

1. Saute the beans, onion, chili powder, and cumin with about 1/4 of a cup of water. If the mixture looks a little dry during cooking, you can add some more water.

2. Once the onions are translucent, let the pot simmer on low heat for 10 minutes. Mash some of the beans with a spoon (or whatever you’re using to stir) and remove it from the heat, still covered.

J also tossed a couple of Hershey Kisses into the pot. This was probably a bad idea, in retrospect, but everything turned out ok. L didn’t notice 🙂

3. Blend the salsa verde, avocado, garlic and juice from the lime.

4. Heat it on the stove on medium-low heat for a few minutes, and set aside on the stove, covered (you can also microwave it).

5. Fry (or scramble, if you like) the eggs in a large skillet.

Stack in the following order:

Tortilla  → Beans → Salsa → Egg

Top with feta and however much hot sauce you want!

YOU WILL NEED:

  • 5 eggs
  • 8 strips of the perfect food that is bacon
  • 1 tube of crois…ckwroissan…ghrg..ghckght….. you know, those triangle rolls that come in the tubes. CRESCENT ROLLS. That’s what those are. Let’s go with that.
  • S&P
  • 1 cup of shredded cheese (we used cheddar)
  • cooking spray or olive oil
  • a pan (for scrambling eggs)
  • a baking sheet (for bacon)
  • a different pan (the blog we found this on says you can use a pizza pan. We used a regular 9 x 11 baking pan.)
WHAT TO DO:
  1. Put the bacon on a cookie sheet. Bake at 375° for 10 minutes (or a little longer if you like it crispier.) WHILE THAT’S HAPPENING:
  2. Scramble them eggs. (J here- just a note that if you, like me, have never successfully scrambled eggs, and have thus developed an irrational fear of the technique, then this is best left to the professionals.)
  3. Lay out the crescent rolls on a pan in a circular pattern with the wide ends inside, and the pointy ends outside
  4. Put the bacon around the inside center of the rolls. Dump about a third of the cheese on top of it, followed by the eggs, then salt and pepper, then the rest of the cheese.
  5. Fold over the tips of the rolls together into the center, and press them all together into one point.
  6. Bake all that business for 15-17 minutes. Some folks say it serves eight- BAAAAHAHAHA WE ATE ALMOST ALL OF IT.
