Lasagna Soup!…Finally!

Needless to say- both are delicious. I made the “mac and cheese” the same way as usual, except instead of macaroni, I used quinoa. Also, I added peas, although I do that (much to J’s dismay at times) anyway.

The soup is basically a deconstructed lasagna- brown some italian sausage, onions, garlic and tomato paste. Then, in slow cooker, add 10 oz. can of fire-roasted tomatoes, sausage/onion/garlic/paste mix, 6 cups of chicken stock, basil, oregano, salt and pepper, and red pepper flakes. When ready to serve, mix up 8oz of ricotta with 1/2 cup of parmesan, salt and pepper.

Plating: Cooked pasta in bowl, ladle soup over top, dollop of cheesy-ness, then a little more mozzarella on top. YUM.

Also today: finished the bridesmaids jewelry! Love how they turned out (but don’t want to spoil what they look like by posting them just yet!)

Also- made a cool ornament. I want to do this for each place we live. It says “First Keys” with our initials and the year we moved in, as well as an imprint of our key. Love it!
