Snowed…out? Also, Pickles.

Happy Holidays!

J and I have been spending a lovely holiday with his family in Rochester, NY. However, we seem to have found ourselves in quite the pickle (1st use of this word for the post). We were planning to head back home to spend Christmas with my family. However, the winter storm turned into a blizzard, which is now keeping us in NY one more day.


So, things we are doing to keep busy:

1. Making applesauce, one of our favorite pastimes.

2. Knitting! One of my presents from J’s mom was knitting needles, yarn and a lesson. Here is what I have accomplished in an hour:

3. Cleaning the house.

4. Hopefully catching the Doctor Who Christmas special.

5. Spending time with family.


Second use of the word pickle:

Whenever we get home tomorrow, Christmas #2 will be occurring. We will gather around the tree, looking for the Christmas Pickle. Whoever finds the pickle first gets to open the first present and then becomes “Santa.”

Ok, no, we’re not.

But kind of.

Just looked at how many different countries our readers and subscribers come from, and it felt kind of cool.



Now that I’ve moved home, L and I are planning a New Year’s party, our first big-time entertaining attempt in our home together. We’re being a bit ridiculous- as I sit here next to her on the couch, we fist pump every time someone responds to our facebook event. I am going to marry this woman.

Here are a couple things we’re thinking of having at said party:

-Pigs in a blanket, arranged into a wreath

-Champagne (I believe it’s pronounced Shamm-pag-in) cut-out cookies (kind of awesome)

Shamm-pag-in jello with pop rocks (really awesome)

Mini-vegetarian-tacomuffin-type-deals (remember those?)

A few events that have happened recently…

Remember that one time when I got so caught up with life that I forgot to blog? Oops. Here’s what you missed:

1. J turning 22…only a year a part in age until May!

2. J “graduated” from college on Saturday, only to return this week to take final exams (weird system…)

3. Today is my last day of bachelorette-hood. I am so excited. Cleaned the apartment, went to the grocery store, crossed what feels like a million things off of my to-do list. In less than 24 hours J will be home and I could not be more excited. Also, holidays are approaching- let the “I’m so happy winter break is almost here” singing and dancing commence.


Short post- hopefully a dinner post with tomorrow’s recipe (sweet potato shepherd’s pie!)

Lasagna Soup!…Finally!

Needless to say- both are delicious. I made the “mac and cheese” the same way as usual, except instead of macaroni, I used quinoa. Also, I added peas, although I do that (much to J’s dismay at times) anyway.

The soup is basically a deconstructed lasagna- brown some italian sausage, onions, garlic and tomato paste. Then, in slow cooker, add 10 oz. can of fire-roasted tomatoes, sausage/onion/garlic/paste mix, 6 cups of chicken stock, basil, oregano, salt and pepper, and red pepper flakes. When ready to serve, mix up 8oz of ricotta with 1/2 cup of parmesan, salt and pepper.

Plating: Cooked pasta in bowl, ladle soup over top, dollop of cheesy-ness, then a little more mozzarella on top. YUM.

Also today: finished the bridesmaids jewelry! Love how they turned out (but don’t want to spoil what they look like by posting them just yet!)

Also- made a cool ornament. I want to do this for each place we live. It says “First Keys” with our initials and the year we moved in, as well as an imprint of our key. Love it!
